Baisers
The kiss is a pastry from the Belgian town of Malmedy, in Wallonia. Variations can be found in those of Ciney, Dinant, Marche-en-Famenne, Mons, Namur, Gembloux, Neufchâteau or Rochefort.
Each kiss is composed of two pieces of meringue pastry, joined by a whipped cream, butter or ice cream.
It was first marketed under the name blankès mèringues ("white meringues"), then, from the 1930's, under the name of kiss, by analogy; the welding of the two meringues reminding that of two mouths exchanging a kiss.
Cougnou / Cougnolle
Cougnou(也叫cougnolle)是一种维也纳面包,在比利时通常作为圣诞食品食用。
Cougnou (also called cougnolle) was, in the past, a Vienna bread holding a plaster or pink marzipan figure of the swaddled baby Jesus.
In Wallonia as early as November 1, All Saints Day, little sugar paste figures appear in the pastry aisles and supermarkets.
This enriched bread may have originated in the province of Hainaut, although it spread throughout all the southern provinces of Belgium and northern France.
Stofé
Another beloved dessert in Belgium is stofé, a popular sweet cheesecake that originates from the city of Wavre in Belgium’s French Wallonian region. To make it, cottage cheese, or stofé in Walloon, is blended with meringue and bitter and sweet almonds and poured over a bed of sliced apples.
The neighboring city of Jodoigne also has a soufflé-like version of the dessert called the blanke doréye. However, this replaces the almonds with a hint of vanilla and the sliced apples with mashed ones. Whichever way you make it, though, be sure to use quality cottage cheese as this is what gives the dessert its unique flavor. Stofé is a great option for those who want a sweet ending to their dinner but prefer a dessert without rich chocolate or cream.

Mattentaarten
Mattentaarten are small, round sweet puff pastry cakes with a light, airy filling of mattenbrij or curd cheese. The cakes are the specialty of the city Geraardsbergen in the Flemish Ardennes and were granted the Protected Geographical Indication (PGI) by the European Union in 2006. This means that they can only be made in the city or the nearby municipality of Lierde. Needless to say, the mattentaart is a source of pride for residents of Geraardsbergen, which is one of the only cities in Belgium to have received this EU designation.
Another small tart with historical origins is the Lierse vlaaike, which is made from a – supposedly secret – spiced cake recipe created more than three-hundred years ago. This is one of the oldest baked goods from the Antwerp province – and also one of the most delicious desserts you will find in Belgium.

Croustillon
There's no single word for croustillant or croustillon in English, but it evokes something crusty, crisp, crunchy - and deep-fried. It's the kind of food associated with the fairs that hold such a special place in the life of our idyllic land of luxury and plenty. These tasty little mini-doughnuts are a speciality of Liège, and the famous Foire de Liège, or October Fair, is really the only place to taste them.
Anyhow, croustillons are eaten with a sprinkling of icing sugar, while burning the tips of your fingers at the very least, as well as your mouth. You eat them as you walk along, and end up having to brush yourself down. And sucking the end of each finger meticulously before discarding the carton.
Tarte brésilienne
The Brazilian pie is a sweet pastry that seems to have originated in Wallonia in the 1970s. It consists of a base of leavened pastry with a generous layer of pastry cream, covered with whipped cream, the whole sprinkled with brazilian (caramelized and crushed roasted hazelnuts and almonds).
The Brazilian pie quickly spread throughout Belgium. Since the 1980s, it has become one of the most popular pies in Belgium along with the rice pie. It can be found in most pastry shops and supermarkets in the country.
